I wanted a range of products on the soft drinks market that didn't contain preservatives.
In the past decades, the focus of food preservation has been on killing bacteria. This has been done with preservatives, heat treatment, ultrasonic, high pressure, high voltage...
But this kills not only the harmful bacteria, but also the beneficial ones. We now know that we need these bacteria for the optimal functioning of our organism.
And raw honey contains beneficial probiotic bacteria and valuable amino acids, as long as it is not subjected to heat treatment or other preservation processes.
For years we have been looking for ways to preserve the beneficial properties of raw honey.
And then it hit us! God figured that out when it was honey's turn :)
In an environment where the water content is below 20% and the sugar content is high (i.e. honey), harmful bacteria cannot survive, but beneficial bacteria can. This is why honey does not spoil.
To meet these conditions, we have called on lyophilised fruit.
Lyophilisation is a dehydration process where water is separated from the frozen product by vacuum. This is very fortunate because it retains almost 97% of the nutritional value.
I would have liked to have fruit juices and soft drinks made from more than just apples and peaches!
Sounds funny, but it turns out that I (David) am personally allergic to apples and peaches!
What are all the juice and syrup preparations full of? Of course apples and peaches :)
It was very difficult to find an alternative. But in summer it's good to have a delicious flavour to help you stay hydrated.
